There are a few misconceptions about eating raccoons. Several people around the globe consider it unhealthy for snacking because they (the raccoons) usually eat trash. But the fact is that they are still loved & eaten by a large number of people around the globe. Interestingly, there is no harm in eating them, and they are quite nutritious. But make sure you find the excellent quality raccoons & cook them properly. Why?

The reason is that raccoons that live near populated areas, i.e. in large urban areas, almost choose to eat each & everything like waste materials & garbage. So, their flesh contains toxins which harmful to humans. So, if you are fond of eating raccoons or need to try a few recipes, make sure to find the ones which are not an urban dwelling raccoon. In short, it is entirely ok to eat raccoons for the people of every age group but make sure where it comes from.

Ingredients for the delicious baked raccoons

There are a variety of tasty Raccoon recipes, but here we are going to discuss the famous one – baked raccoons. You need the following ingredients for the delicious baked raccoons.

  • Large Raccoon – 1
  • Oil – 3 Tbsp 
  • Bay leaves – 4 (crumbled)
  • Large Vidalia Onion – 1 
  • Large Bell Pepper -1 
  • Celery Stalks – 2
  • Poultry Seasoning – 1Tbsp 
  • Water – 2 cups 
  • Salt – to taste 
  • Pepper – To taste 

Baked Raccoons: A comprehensive cooking method

The first & foremost step is to dress the raccoon. To remove the lymph glands of raccoons, you may seek assistance from an experienced person, which will also assist you in removing its skin correctly. An improperly skinned raccoon is not just unhealthy but quite distasteful as well.

After you are done, wash the raccoon with the tap water thoroughly & cut the complete raccoon into desired pieces. Afterward, soak the skinned raccoon in water for at least 3 hours. Drain it & then season it with the poultry seasoning, pepper, and salt. Keep it aside & chop the onions to small pieces. 

Now the cooking process begins: 

  • Take a fryer, put the oil in it & heat it on a low flame.
  • Now add the pieces of raccoon & fry well from both sides until it turns medium brown. 
  • Now, these fried pieces of raccoons need to be placed in a pre-heated oven at 325F. 
  • Take a roasting pan & put these pieces in it & crumble bay leaves over it.  
  • Now again, sprinkle a bit more Poultry Seasoning over it. 
  • Now add chopped onion, bell pepper, celery & add water to it. 
  • Bake it well for approximately hours & keep checking it side by side to add more water if required during baking. 
  • It will turn to medium brown when cooked thoroughly & the meat will be tender enough to get separated from the bones.
  • The delicious baked raccoons are ready to serve. You need to serve it with potatoes, peas, cornbread, and gravy. 

Tip: If even after 3 hours of baking, it does not seem enough brown, you can keep in it a broiler for 10 to 15 minutes.
